On-The-Go Recipe: Date Nut Bars

Anyone else like recipes you can make straight from your pantry? No shopping trip needed! This is exactly why I made these bars. I had some dates, I had some nuts, I had some dried fruit, and I threw in whatever else I had laying around. Use my recipe as a template, but please get creative and use what you have!

These are nutritious and delicious - pack a few for the office!

Ingredients:

  • 1 cup dried fruit - I used cherries, figs and coconut strips

  • 1 cup pitted dates

  • 4 cups raw almonds

  • 1 tsp each - cinnamon, clove, ginger

  • 1/4 cup chia seeds

  • 1/4 cup hemp hearts

Directions:

Soak dried fruits in water for 2-5 minutes to soften. Pulse almonds in a food processor until they are finely chopped, but before it becomes a paste. Add fruit (drained), spices, chia seeds and hemp hearts. Feel free to add a little salt, honey, and anything else you think would taste good in the mix! Process for a few more minutes, until evenly combined. Line a baking pan, or a cookie sheet with a lip, with coconut oil. Spread out the date nut mixture evenly across the pan and flatten as best you can. Oil the top as well, and cover with a plastic sheet. Refrigerate for at least 30 minutes. Turn out onto a cutting board and cut into bars. You decide how big you want your bars to be. Wrap individually and keep in the fridge for a few days or freeze for a few months. Yum! This recipe can be customized in so many ways. Use what you have in your pantry. Any combination of nuts and fruit should work.
